Toffee seeds with fresh pear, parmesan and Rocket

Serves 2

  • 2 tbls Kapai Puku Cacao Seed Mix
  • 1 tsp balsamic vinegar
  • ¼ tsp maple syrup
  • 1 tsp extra virgin olive oil
  • 1 tsp white wine vinegar
  • 1 pear, sliced
  • 2 handfuls rocket
  • parmesan shavings

Heat a heavy based frying pan on low. Add Kapai Puku Cacao Seed Mix and stir frequently for about 3 minutes or until the seeds look toasted. Remove from the heat and add the balsamic vinegar and stir to combine. Add the maple syrup to coat the seeds. The seeds should clump together. Set aside.

For dressing- place the oil and vinegar in a jar with a lid, season with salt and pepper and shake to combine.

Divide the rocket, pear, and a few shavings of parmesan on plates. Drizzle with dressing and top with seed mix.
