Green soup – easy and delicious

2 large serves

  • 3 tbls Kapai Puku Raw Seed Mix
  • ½ tsp extra virgin olive oil
  • 1 Broccoli head approx. 375g, roughly chopped
  • 2 handfuls Spinach leaves
  • Mint about 12 leaves
  • Extra olive oil
  • Salt and pepper

Heat a heavy based frying pan on low. Add Kapai Puku Raw Seed Mix and oil. Frequently stir and cook for about 3 minutes or until the seeds look toasted. Set aside.

Place the broccoli in a medium saucepan, and just cover with water. Add two good pinches of salt. Bring to the boil, then reduce to a simmer. Cover with lid and cook for 6 to 8 minutes until the broccoli stems are soft, that is, a knife can easily pierce the stem. With a slotted spoon, remove the broccoli from the saucepan, keeping the water. Place the cooked broccoli, spinach and mint in a blender. Add enough of the reserved liquid, approx. 11⁄2 cups, and blitz. Add more liquid if needed. Season to taste. Pour soup into bowls, top with Kapai Puku Raw Seed Mix and drizzle with a little extra virgin olive oil for extra taste.
