Kapai Puku Quiche

Pastry Ingredients
2 Cups Spelt Flour (or your preferred flour choice)
1 Cup of Kapai Puku – No 1. Liver Health
2 Cups of Water
¾ Cup Grapeseed Oil
¾ Cup Ground or Shaved Parmesan Cheese (optional)
½ Teaspoon Himalayan Salt

Filing Ingredients
5 Eggs
¼ Cup Water
¼ Pumpkin (Kent)
3 Medium Sized Tomato’s
1 Large Zucchini
1 Large Shallot
6 Baby Spinach Leaves (washed)
¾ Cup of Pine Nuts
2 Tablespoons of Grapeseed Oil
1 Teaspoon Oregano Herbs
1 Teaspoon Honey
Handful of Fresh Basil
1 Garlic Clove
½ Teaspoon Himalayan Salt

Cooking Utensils
Flan Tray or Pie Dish
Blender

Method
Preheat Oven to 180 degrees Celsius.
Combine 1 Cup of Kapai Puku – No 1. Liver Health, Water, Grapeseed Oil and Himalayan Salt to blender and blend for a few minutes.  Stir in Parmesan Cheese.  Gradually add sifted Flour stirring until consistency is sticky then turn onto flour dusted Bread Board to knead further until mixture is doughy.

Oil Flan Tray with Grapeseed Oil and evenly press mixture into Tray.  Place in Oven and cook Pastry for approximately 20 minutes.

Cut Pumpkin into bite size pieces.  Tomatoes into wedges. Zucchini into disks.  Add to separate baking dish turned with a drizzle of Grapeseed Oil, Sprinkle of Himalayan Salt and Dried Oregano.  Place in Oven for approximately 25 minutes or until cooked.

In a separate fry pan, brown up thinly sliced slithers of Shallot.  Once transparent, add honey and remove from stove to prevent burning.

Blend in a separate small container Garlic, Basil, small handful of Pine Nuts and Grapeseed Oil to make a Pesto Paste. (Optionally you can use commercial Pesto – try to avoid the ones with nasty additives).
Lightly whisk Eggs and ¼ Water with a Pinch of Himalayan Salt.  Add Pine Nuts to Egg Mix.
Evenly place Roasted Vegies, Baby Spinach Leaves and Cooked Shallot over Cooked Pastry Case.

Pour Egg Mix over the top.

Place very small dollops of Pesto intermittently across dish for delicate bursts of flavor.
Cook in the oven for approximately 35 minutes or until brown and slightly firm to touch.

Serve with side salad.
